Duck Eggs

Scrambled Duck Eggs with Chives and Smoked Salmon

6 duck eggs
1 cup cream
Pinch sea salt flakes & cracked black pepper
20g butter
10ml oil
1/2 cup chopped chives
4 slices smoked salmon
4 slices sour dough bread

Whisk the duck eggs and cream together and season to taste. Heat a fry pan and melt the butter and oil on a low heat. Add the egg mixture and carefully stir a figure 8 with a wooden spoon until cooked through. Add the chives and salmon slices and serve on hot buttered sour dough toast.
