Sweet Treats - Gingerbread Ducks

Why not bake some Gingerbread Ducks to have for a tasty afternoon snack. The smell from these biscuits while they are cooking will have you waiting by the oven door, until the timer goes off and they're ready to eat

You will need a duck shape cookie cutter to make them.

INGREDIENTS

185g butter
1 cup firmly packed brown sugar
2 eggs, beaten with a fork
2 tablespoons golden syrup
1/2 teaspoon bicarbonate soda
2 teaspoons milk
3 1/2 cups plain flour
1 teaspoon cinnamon
1 teaspoon ground ginger

METHOD

Cream the butter and the sugar, until as light as possible.
Add the beaten egg and golden syrup.
Dissolve the bicarbonate soda in the milk and add to the mixture.
Fold in sifted flour, cinnamon and ginger.
Turn out and knead lightly, wrap and chill for at least 30 minutes.
Roll the dough out to 3-5mm thickness and use cookie cutter to cut out shapes.
Place on greased trays taking care not to pull out of shape.
Decorate with currants, nuts or lollies.
Bake at 180C for 15 minutes.
