2 med size Brown Onion - peeled and sliced
2 x Cloves Garlic - peeled and smashed
100ml Olive Oil
500g Potatoes (Pontiac) - peeled and sliced (not washed)
1 litre Luv-a-Duck Stock
200ml Cream (35%)
Sea Salt and Freshly Ground Pepper
1. Place a heavy based pot over a moderate heat. Add the olive oil.
2. Add the onion, garlic and a pinch of salt and sweat for 3-4 minutes and allow to soften.
3. Add potatoes and sweat until they start to stick to the bottom of the pot.
5. Now add the stock and cream. Cook until the potatoes are soft.
6. Blend the soup until smooth and pass through a fine chinoise / strainer.
7. Re-season to your liking.
