Lentils in Duck Stock

This simple lentil dish goes very well with duck and can also be used as an accompaniment to pasta or left to cool and used as part of a salad.

INGREDIENTS

1 tbsp olive oil
1 onion (chopped)
2 cups lentils
3 cups Luiv-a-Duck duck stock
2 cups water
1 sprig thyme
Salt & pepper

METHOD

Warm the olive oil in a suitable pan, add the onion and cook until translucent.
Add the lentils, duck stock, water and thyme and bring to the boil, season with salt & pepper.

Allow to simmer for 40 to 50 mins until the lentils are tender.
