Why have Duck Legs for Christmas?
Well you can be sure that everybody gets a leg!
Duck Legs are very hard to overcook or dry out.
They reheat really well.
They are easy to cook.
Duck legs can be simply roasted in a hot oven 200C, sprinkled with a little salt for 30-40 mins depending on the size.
Use the fat that they give up to roast your potatoes.
Use the juices they give up to make a simple sauce.
Duck goes well with the classic accompaniments like roast potatoes, chipolata sausages, cranberry sauce and traditional bread sauce.
You could also serve the duck legs on a bed of noodles or rice with some freshly cooked Asian greens for that alternative Christmas.
Duck Legs are also good served cold either as a whole leg or take off the meat and shred it for a salad.
