Use any selection of vegetables you have available if it's not Christmas, eg. carrots, snow peas and enoki mushrooms!
These Christmas themed adaptions look cute and taste delicious!
1 Peking Duck Breast
8 sheets rice paper wrappers
1 lebanese cucumber 6cm julienned lengths
Green section of spring onion sliced 6cm julienned lengths
1 red capsicum 6cm julienned lengths
Hoisin sauce
100g vermacelli rice noodles soaked in warm water & drained
1 bunch chives
Slice the peking duck breast into 8 slices lengthways.
Dip one rice paper wrapper in hot water. Shake dry and place on kitchen paper to absorb excess water.
Place a piece of cucumber next to a piece of capsicum in middle of wrapper. Place a small amount of noodles along the vegetables. Then place a piece of duck breast on top of noodles. Spread some hoisin sauce on duck with back of teaspoon. Place another length of capsicum, and green onion side by side, on top of the duck.
Fold over the edges of the rice paper over the package and into the middle. Then roll from one end to form a roll.
Lay roll over two long lengths of chive and tie these into a bow.
Place onto serving plate with some mistletoe!
