Pomegranate Molasses Marinated Duck

INGREDIENTS

4 Luv-a-Duck raw duck breasts
2 tbsp pomegranate molasses
2 tbsp lemon juice
2 cloves of finely chopped garlic
1/2 tsp sugar
1/4 cup olive oil
1 tbsp honey

METHOD

1. Cover a duck breast with plastic wrap and using the smooth side of a mallet or a rolling pin, flatten the breast lightly to even the thickness. Repeat with remaining duck.

2. Combine remaining ingredients and 1 tsp salt and whisk until well combined. Place duck in a shallow glass or ceramic dish, pour over the marinade and turn duck to coat. Cover and marinate for 1 hour. Drain duck and reserve marinade.

3. Barbecue over a medium high heat brushing with the remaining marinade, until just cooked through.
