Can serve with orange wedges too, if you fancy.
4 Luv-a-duck fresh breasts
200g marmalade
6 tablespoons soy sauce
2 tablespoon sesame seeds
herb leaf salad to serve
Preheat oven to 200C. Slash skin of duck breasts in a criss cross pattern, season and sear in a hot frying pan over a high heat for 2 minutes each side. Meanwhile in a small roasting tin mix marmalade with soy and sesame seeds. Add the duck and turn to coat.
Roast for 8 - 10 minutes in the oven, until golden and still a little pink in the middle. Rest for 5 minutes, then thickly slice. Serve over the top of green leaves and drizzle over the pan juices.
