2 Fresh Luv-a-Duck Breasts
Bitton Orange Jelly
2 tablespoons Bitton Chilli Oil
4 Granny Smith Apples
1 Passionfruit, pulp and seeds only
1 tablespoon Ginger
1 clove crushed Garlic
1 tablespoon Caster Sugar
2 tablespoons Bitton Asian Dressing
1/2 bunch Coriander
Pre-heat oven to 220C.
Place a shallow frying pan over a medium high heat. Add Bitton Chilli Oil. Place apples in the pan and stir-fry for 30 seconds. Add the ginger, garlic, caster sugar, passionfruit pulp, coriander and season with salt and white pepper. Cook the apple mixture on high for another 30 seconds.
For the breasts, score fat side with sharp knife. Brush Orange Jelly all over breasts, coating all sides. Place duck, skin side down, in hot pan for 3 - 4 minutes, until skin is brown. Turn over and seal on meat side for another minute. Place into oven for 8 minutes (for med/rare). Take out and rest for minimum 5 minutes. Then slice on the diagonal making about 8 slices from each breast.
To serve, divide the apple mixture evenly between four plates. Arrange slices of the duck breasts on top and drizzle over the Asian Sauce.
