Dragonfruit is the new "black" with foodies!
Impress your guests with its beautiful look and taste in this modern dish.
4 x Luv-a-Duck Duck Breasts
1 dragonfruit
1 mango
1/4 pineapple
2 teaspoons brown sugar
1 tablespoon fresh lime juice
Cut dragonfruit into quarters lengthways and remove the skin. Cut the flesh into small pieces. Cut the mango cheeks away from the stone and cut each cheek into small pieces. Cut the skin from the pineapple and cut away to the core. Cut into small pieces. Combine all fruit in a shallow dish.
Sprinkle with the sugar and lime juice. Toss through and put in fridge for 30 minutes for flavours to develop.
Heat frypan over medium heat. Lightly season breasts with a little salt and pepper.
When pan is hot, place the breasts skin side down using no oil and cook for about 5 minutes until skin begins to brown.
Turn over and cook for another minute then put on tray into hot oven (200C) for about 7 minutes.
Take out and rest for at least 5 minutes.
Then slice each breast into a fan and place on plate with the dragonfuit salad.
