6 Luv-a-Duck duck eggs
1 cup cream
Pinch sea salt flakes
Pinch cracked black pepper
20g butter
10ml oil
1/2 cup chives, chopped
4 slices smoked salmon
4 slices good quality sour dough bread
Chives for garnish
In a large mixing bowl, whisk the duck eggs and cream together, and season to taste.
Heat a large heavy based frypan and add the butter and oil.
Once the butter has melted, pour in the duck egg mix.
Using a wooden spoon slowly create a figure 8 through the eggs to cook evenly.
Add the chives and stir through.
Toast the sourdough bread and spread with butter.
Place the toast on a plate and top with scrambled duck eggs.
Top with the smoked salmon and garnish with chives.
