Tiramisu

INGREDIENTS

3 Luv-a-Duck duck eggs
75g sugar
60ml marsala
750g mascarpone
150g savoiardi biscuits (sponge fingers)
20g dark chocolate, grated
Cocoa to serve

Coffee Ingredients
30g sugar
150ml fresh brewed espresso coffee
180ml marsala
30ml dark rum

METHOD

1. Combine coffee ingredients and stir until sugar dissolved.

2. Whisk eggs and sugar until light and fluffy.

3. Mix marsala and mascarpone until smooth. Add to the egg mix and stir until combined. Do not overbeat

4. Spread 1/4 of the egg mixture over the base of a serving dish.

5. Dip the biscuits in coffee mix and layer on top.

6. Repeat twice more - finishing with an egg layer on top.

8. Chill and serve dusted with cocoa and grated chocolate.
