Duck Fat Ideas

Many chefs cherish duck fat and and will tell you that the finest fried potatoes in the world are cooked in duck fat.

Here are a few more ideas of how to use duck fat.

Gascony butter
Mix duck fat with blanched pounded garlic. This is known as gascony butter and is used to flavour soups and cassoulet and can be spread onto croutons.

Saute potatoes
Steam potatoes in their jackets, cool, peel and slice. Fry in a pan in duck fat until golden brown. Season with a little salt and freshly ground pepper. A great accompaniment to confit of duck.

Roast vegetables
Simply lightly brush on to a selection of prepared root vegetables roast till golden and serve with traditional roast duck or other roast meats, poultry or game.

Mediterranean style vegetables
Mediterranean style vegetables such as peppers, eggplant and zucchini will take on a whole new taste sensation when roasted in a hot oven with duck fat and garlic cloves.
