Confit Roast Potatoes

Potatoes taste delicious when you cook them in duck fat. Try this recipe next time you have guests.

INGREDIENTS

1 kg good quality potatoes
1/3 cup duck fat
1 clove garlic
1/4 tsp salt
2 sprigs thyme

METHOD

Peel the potatoes and cut into 1/4's, then place into a zip locked bag with garlic, duck fat, salt, pepper and thyme, expelling any excess air.

Bring a pot of water to the boil.

Place the bag of potatoes into the simmering water and cook for 45 min.

Drain the fat from the potatoes and serve with some truffle oil and ground porcini mushrooms.
