By making the confit of garlic, you soften and enhance the garlic flavour and have a wonderful garlic flavoured duck fat, which will have many uses.
30 cloves garlic
250ml Luv-a-Duck duck fat
1 bay leaf
1 sprig thyme
Simply put all the ingredients into a suitable size saucepan and bring to a simmer (do not let it boil).
Cook until the garlic is tender, approx. 20 to 30 minutes.
Leave to cool slightly and pour into sterilised jars and seal when cooled.
Store in a cool place, it will keep for one month.
