Duck Liver with Proscuitto and Red Wine Sauce

INGREDIENTS

250g Luv-a-Duck duck livers
1 tbsp olive oil
8 thin slices proscuitto
1 sprig parsley, finely chopped
Salt and freshly ground black pepper
200ml red wine or caramlised onion sauce, warmed

METHOD

In a fry pan add a little olive oil. When it is hot, season the livers with a little salt and freshly ground black pepper.

Cook the livers for about 1 to 2 mins on both sides and put aside.

Place the proscuitto in the fry pan just to quickly warm and crisp.

Arrange livers in the middle of warm plate with a couple of slices of prosciutto on top.

Add a spoonful of red wine sauce, sprinkle with freshly chopped parsley and serve immediately.
