Rosemary skewers
You could use fresh rosemary to make skewers - simply remove leaves from the sticks leaving a few leaves on the end - they will add flavour as well as presenting very well.
Serve with a relish or chutney.
6 Luv-a-Duck duck livers
12 cocktail sticks or skewers
6 slices proscuitto cut in half lengthways
1 tsp olive oil
Salt and freshly milled pepper
Heat a non-stick fry pan and add the olive oil, season the livers with a little salt & pepper and place in the hot pan and seal quickly on each side.
Remove from the pan and allow to cool.
Cut the livers into halves and wrap in the proscuitto and secure with the cocktail stick.
Place on a non stick baking sheet and when ready to serve place under a hot grill or in a hot oven for a few minutes untill crispy and completely heated through.
