Duck Ravioli with Lentils




INGREDIENTS

375g Luv-a-Duck duck ravioli
1 cup cooked lentils
1/2 tbsp olive oil
1/2 onion, chopped
2 roma tomatos, seeded and diced
Fresh basil leaves, torn
Salt & pepper
1 tbsp roasted pine nuts

METHOD

Put a large pot of salted water on and bring to the boil.

Cook the pasta in salted boiling water for 2-3 minutes, drain well.

Mix the olive oil, onion and tomatoes and season to taste. Stir in the lentils and spoon over the pasta.

Sprinkle with pine nuts and torn basil to serve.
