4 as a potato dish
Serve with some steamed green peas tossed with a knob of butter and a sprig of fresh mint.
Winter time is time for comfort food and there is nothing more comforting than sausages and mash.
The important thing to remember with a mash is to cut the vegetables into even size pieces, boil with a little salt until just soft enough to mash, drain well, and season well.
Luv-a-Duck duck sausages
1 kg potatoes, peeled and cut into similar sizes
Pinch salt
1 tbsp butter
1/4 cup cream
Pinch nutmeg
Pinch pepper
Heat the sausages as per instructions on the packet.
Boil the potatoes in salted water, reduce heat to simmer until cooked, about 15-20 mins.
Drain well and mash.
Put the saucepan back onto the stove and add the butter and cream, when warm add the mash and some nutmeg & pepper and mix well until smooth and creamy.
While the potatoes are cooking simply grill, pan fry, or BBQ the sausages until golden brown.

Swede and garlic with coarse black pepper
Use half potatoes and half swede, 3 cloves of garlic and season with freshly ground black pepper
Pumpkin and spinach with feta cheese
Use half potatoes and half pumpkin, add a cup of baby spinach when warming the cream and butter and sprinkle over a little feta cheese when serving.
Sweet potato and bacon
Use half potatoes and half sweet potato. Fry a couple of chopped rashers of bacon until crispy and sprinkle over the top when serving.
