Serve onion gravy on the side.
Toad in the hole is a delicious combination of sausages cooked in Yorkshire pudding batter.
6 Luv-a-Duck duck sausages
100g plain flour
Pinch of salt
1 egg
300ml milk
1 tbsp Luv-a-Duck duck fat
Sift the flour and salt together into a mixing bowl and make a well in the centre.
Add the egg and mix with a wooden spoon, slowly incorporating the flour. When the mix is getting thick add the milk gradually until a good batter consistency has been achieved.
Place the sausages and duck fat in an ovenproof dish and heat in oven at 220C for 10-15 or until hot (ensure the fat has coated the bottom of the pan).
Pour in the batter and return to the oven.
Cook for 20-30 mins until risen & golden.
Remove from the oven, allow to cool for a moment, cut a wedge and serve with mashed potatoes and steamed vegetables.
