Serve in a roll as a snack or as a main course with mash or saute potatoes.
If you have leftover caramelised onions, put them into an airtight container and they will keep very well in the fridge.
They will go beautifully with cheddar cheese as a snack.
1 packet Luv-a-Duck Sausages
3 brown onions, finely chopped
4 tbsp butter
4 tbsp brown sugar
1/2 cup red wine
1/2 cup balsamic vinegar
1 tbsp olive oil
Salt and freshly ground pepper
Melt the butter in a suitable pan.
Add the onions and gently cook until soft.
When the onions have cooked, add the brown sugar. Turn up the heat, add the wine and allow it to reduce by at least half.
Add the vinegar and reduce down until a syrupy consistency.
Cook the sausages in a fry pan with a little duck fat or a spray of oil. Alternatively, you can grill on a hot grill plate or BBQ.
