Uses
Slice and use in salads, pastas & rice dishes.
Slice and pan fry in a little duck fat until crisp and use as garnish.
Use in sauces or salads, and fried potatoes.
500g Luv-a-Duck duck giblets
1 cup sea salt granules
1 bay leaf
1 sprig thyme
Luv-a-Duck duck fat or olive oil, enough to cover giblets
Place the giblets in a flat dish and cover with the salt & herbs.
Leave for 12 hrs.
Remove the giblets from the salt and rinse off under cold water.
Drain well.
Place in a roasting dish and cover with melted duck fat or olive oil.
Cook in a cool oven 150C 2-3 hrs until tender.
Remove giblets from fat and allow fat to settle.
Place giblets in a storage container and spoon over fat until covered (do not let any of the other liquid go into the giblets).
Store in the fridge until ready to use.
