Duck Sausages with Cherry Tomato Compote

The slight natural sweetness of the tomatoes and apples complements the duck sausage extremely well.

INGREDIENTS

4 Luv-a-Duck duck sausages
1/2 onion, shredded
1 tsp olive oil
1 apple, peeled & diced
1 punnet cherry tomatoes
1 tbsp balsamic vinegar
Salt & pepper
1 tsp chives, chopped

METHOD

Put the sausages on to grill.

Lightly cook the onion in the olive oil for 1-2 mins without colouring. Add the diced apple and cook for a further minute.

Add the cherry tomatoes and the balsamic vinegar and cook until the tomatoes just begin to split. Season with salt & pepper and stir in the chives.
