Serve with steamed whole small potatoes.
This recipe uses the Luv-a-Duck Roast Half Duck, but will work equally well with duck that you have cooked yourself, or any of the other pre cooked Luv-a-Duck portions.
1 packet Luv-a-Duck Roast Half Duck
200g baby English spinach
1 tsp butter
1 tbsp pine nuts, roasted
Pinch nutmeg
Salt and freshly ground black pepper
Cut the duck portions in half and place onto an oven tray, place under a hot grill or in a hot oven until golden.
Melt the butter in a saucepan and add the spinach.
Season with the nutmeg, salt and pepper and stir.
Serve the spinach onto the plate, sprinkle with a few pine nuts and place the duck on top.
