Roast Duck Leg Mango and Asparagus Salad

A great salad while fresh mangos are available.

INGREDIENTS

1 Luv-a-Duck Roast Duck Leg
24 asparagus spears, cooked
1 large mango, peeled and sliced
3-4 cups salad greens, mixed
3 tbsp olive oil
1 tbsp orange juice
1/2 tsp French mustard
Salt & freshly ground pepper

METHOD

Slice the duck, heat as per instructions on packet.
Mix the oil and orange juice and season with salt and pepper to make a dressing.
Arrange the salad greens on a platter.
Toss the mango and asparagus in the dressing.
Spoon over the salad greens.
Arrange the duck on top and serve.
