Duck Pasta

This simple pasta dish will work well with fresh or dried pasta.

INGREDIENTS

1 packet Luv-a-Duck Roasted Duck Breast or Leg (finely sliced)
500g pasta
1 tsp olive oil
1 cup green beans
6 spring onions, chopped (use the green section of 2 for garnish)
2 tsp mild wholegrain mustard
100ml thickened cream
Few slivers Parmesan cheese
Salt and pepper

METHOD

Cook the pasta in plenty of boiling salted water.
Add the beans for the last minute of cooking.
Drain well in a colander.
Add the olive oil to a hot pan and add the chopped spring onion, and cook for a couple of minutes, add the mustard, cream and bring to the boil.
Add the sliced duck and the pasta and beans and stir well.
Season with a little pepper.
Bring back to the boil and serve.

Serve with a sprinkle of fresh Parmesan and spring onion on top.
