Peking Roast Duck Breast Stir-fry with Vegetables

This recipe uses the Luv-a-Duck Peking Roast Duck Breast, and of course would go equally as well with other portions of duck that you cook yourself.



INGREDIENTS

2 Luv-a-Duck Peking Roast Duck Breasts
1 tsp sunflower oil
1 medium onion, peeled and cut into wedges
1 clove garlic
1/2 head broccoli, cut into small florets
1 cup baby sweetcorn
1 cup oyster mushrooms
1 tbsp walnut halves
1 tbsp oyster sauce

METHOD

Slice up the duck.

Heat the oil in a wok or large frypan. Add the onion and garlic and stir-fry for 1 minute.

Add the broccoli and sweetcorn and cook for a couple of minutes.

Add the duck, oyster sauce and mushrooms and allow to heat through thoroughly.

Serve with the walnuts sprinkled over.
