Roast Duck Shanks with Pumpkin & Sweet Potato Mash

Roast Duck Shanks are another innovative product from Luv-a-Duck. They are the thick first joint from the wing bone that have been roasted long and slow. All that remains to be done is to warm and serve.




INGREDIENTS

12 Luv-a-Duck Roast Duck Shanks
250g pumpkin, peeled & diced
250g sweet potato, peeled & diced
1 large potato, peeled & diced
1 tbsp parsley, chopped
1 tsp thyme, chopped
1 tbsp butter
Salt & freshly ground black pepper

METHOD

Heat the duck shanks as per the instructions on the packet.

Put the pumpkin, sweet potato and potato into a saucepan cover with cold water add a pinch of salt and bring to the boil.

Cook until tender drain well and mash with the parsley, thyme, butter and salt & pepper.

Serve a spoon full of mash on the plate and arrange the shanks on top.
