If you use other noodles, they may need to be boiled for a few minutes. It is best to follow the directions on the pack.
Roast Duck Shanks are another innovative product from Luv-a-Duck. They are the first joint from the wing bone that have been roasted long and slow. All that remains to be done is to warm and serve.
12 Luv-a-Duck Roast Duck Shanks
1 cup BBQ relish
250g rice noodles
For the dressing :
1 tbsp coriander, chopped
1 tbsp mint, chopped
3 tbsp sweet chilli sauce
1 1/2 tbsp Thai fish sauce
1/4 cup peanuts, roasted and roughly chopped
Pour the BBQ relish over the duck shanks and coat well.
Heat the duck shanks as per the instructions on the packet.
Soak the noodles in boiling water for about 10 minutes until soft. Stir with a fork to loosen.
Mix the coriander, mint, sweet chilli sauce and fish sauce together.
Drain the noodles well and mix with the dressing.
Spoon onto the plate sprinkle with the chopped peanuts and serve the duck shanks on top.
