Roast Half Duck with Spinach

Luv-a-Duck Roast Half Duck is a fully cooked product ready to be heated and enjoyed in a variety of recipes.

INGREDIENTS

Luv-a-Duck Roast Half Duck

1 bunch spinach (well washed)
1/4 cup pinenuts
1 tbsp butter

Pinch nutmeg
Salt & freshly ground pepper

METHOD

Heat duck, skin side up, in oven or under a grill.

Toast pine nuts in a dry frypan over a medium heat and remove from pan.

Heat butter in pan and add spinach, stirring continuously.
Season with nutmeg, salt and pepper.

Arrange spinach and warm duck portions on a plate and sprinkle the pinenuts.
