Duck shanks are another innovative product from Luv-a-Duck. They are the thick first cut from the wing bone that have been slow roasted.
1 pack Luv-a-Duck Roast Duck Shanks
250g rice stick noodles
1/4 cup peanuts, roasted and roughly chopped
1/2 cup Asian dressing
1/2 cup red capsicum, julienned
1/2 cup spring onion, julienned
Place the duck shanks on to an ovenproof tray and place in a hot oven for 15 mins until completely heated through.
Boil the noodles in boiling water for about 5 minutes, stir with a fork to loosen.
Drain the noodles well and mix with the dressing.
Spoon onto the plate sprinkle with the chopped peanuts and serve the duck shanks on top.
Garnish with capsicum and spring onion.
