A simple salad that will be great served warm or cold as an entree or a light lunch.
1 Luv-a-Duck Roasted Duck Breast or Leg
1 cos lettuce, washed and dried
4 roma tomatoes, sliced
10 bocconini cheeses, sliced
1/2 cup olives, pitted and halved
Basil leaves, torn
1 tbsp balsamic vinegar
3 tbsp olive oil
1 tsp dijon mustard
Slice the duck and heat as per instructions on packet.
Arrange the lettuce on a serving platter top with the tomatoes, cheese, olives and basil.
Make a salad dressing with the oil and vinegar mustard and season with salt & pepper.
Spoon the dressing over the salad and arrange the duck on top.
