Serve with mango chutney.
Warming the duck brings out its mild flavour. The natural sweetness of the mango chutney and slight acidity of the cheese make this a perfect accompaniment to duck.
1 Luv-a-Duck Roasted Duck Breast
70g fetta cheese
1 tbsp balsamic vinegar
3 tbsp olive oil
1 tsp dijon mustard
1 tsp parsley, chopped
Mixed salad leaves
1 tbsp roasted hazelnuts roughly chopped
Salt & freshly ground pepper
Slice the duck breast, and set aside.
Make a salad dressing with the oil and vinegar mustard and parsley and season with salt & pepper.
Toss the salad leaves with the dressing and place onto a serving plate.
Arrange slices of fetta on top of the salad.
Warm the slices of duck under a hot grill for 1-2 minutes. Arrange on top of the salad.
Sprinkle with roasted hazelnuts and serve.
