You can make your mango salsa one hour before serving to let the flavours develop.
Meaty and tender, duck shanks are are great as a finger food or as part of a warm salad.
2 packets Luv-a-Duck Roast Duck shanks
20 asparagus spears
20 green beans
Salsa Ingredients:
1 mango, peeled and chopped
1/2 red onion, chopped
1 tbsp coriander, chopped
1 tbsp mint, chopped
1 birdseye chilli, finely chopped
Juice of half a lemon
Grill the asparagus and beans with a spray of olive oil or a little duck fat.
Warm the duck shanks as per pack instructions.
Mix the ingredients for the salsa together.
Arrange the asparagus and beans on a serving platter.
Top with the shanks and serve with the salsa.
