Mayonnaise mixed with Wasabi would make a really good accompanying sauce to serve with this dish.
Duck works very well with fresh Japanese flavours.
2 Luv-a-Duck Roasted Duck Legs
1 avocado
2 tomatoes, seeded and diced
1/2 red onion, chopped
1 tbsp chives, chopped
4 cups lettuce
1 tsp wasabi paste
1 tbsp rice wine vinegar
Japanese pickled ginger
Mix together the avocado, tomatoes, chives and onion.
Mix the wasabi with the rice wine vinegar and stir through the tomato and avocado.
Remove the duck from the bone, roughly slice up and warm in a hot oven for a few minutes.
On a serving plate arrange some lettuce a spoonful of the avocado mix and smoked duck on top.
Garnish the plate with pickled ginger.
