Peking Roast Duck Breast Egg Rolls

Duck egg rolls are great for a finger food function or dinner party.

INGREDIENTS

Egg Rolls:
4 eggs
1/2 cup milk
1/4 bunch coriander, chopped
Salt and pepper to taste.


Filling:
2 Luv-a-Duck Roast Peking Duck Breasts
1 cup bean shoots
1/4 cup coriander, chopped
3 cloves garlic, thinly sliced
1 small red onion. thinly sliced
1 red capsicum, julienne
1/2 cucumber, julienne
1/4 cup light soy sauce
1/3 cup sweet chilli sauce
2 tbsp crushed mixed nuts

METHOD

Egg rolls:
Mix all ingredients together.
Heat a small pan over high heat place 1/4 cup of the egg mixture into the pan.
Tip and swirl the pan so that the egg covers the whole pan.
Cook until golden brown and repeat.

Duck and filling
Slice duck and set aside.
Mix all the filling ingredients together
Fill the egg roll with slices of duck and filling.
Roll and serve.
