Roast Duck Leg Filo Bon Bons

This is an ideal starter. It uses filo pastry so it is nice and light.

INGREDIENTS

2 Luv-a-Duck Roast Duck Legs

1 tbsp olive oil
1 onion, diced
1 small red and green capsicum, sliced
8 button mushrooms, sliced
1/4 cup cream
1 tbsp parsley, chopped
Salt & freshly ground pepper

12 sheets filo pasty
Spray olive oil

METHOD

Remove the meat from the Roast Duck Legs and roughly slice.
Heat the olive oil in a suitable pan, and cook the onion for 2-3 mins until opaque.
Add the capsicums and cook until soft.
Add the mushrooms and cook for 2 to 3 minutes. Remove from heat.
Allow this to completely cool and then stir in the cold duck meat.
Spray a sheet of filo pastry with a little olive oil then place the next sheet on top and spray with olive oil and repeat until you have 3 sheets.
Place the sheets lengthways in front of you.
Spoon about one quarter of the mix on the bottom end of the sheet in the middle.
Roll up and gently tuck in the ends to make a cracker shape.
Place on to a baking sheet lined with baking paper keep the join on the pastry at bottom.
Repeat until you have made up all four.
Bake in a pre heated oven 190C until golden.
