A great balance of spicy and cool flavours used in this recipes.
1 large pizza base
1 pkt Luv-a-Duck Honey Roast Duck Legs
1 tbsp cajun seasoning
Caramelised onion (see recipe below)
30g roasted red pepper
2 tbsp natural yoghurt
Few sprigs mint chopped
Salt and pepper
Lemon juice
1/2 cup napoli sauce
Remove the duck meat from the bones and toss through the Cajun seasoning
To make the caramelised onions:
Slice 2 onions finely and cook in butter and olive oil, keep stirring until the onions turns light brown in colour.
Add 2 tbsp brown sugar and a splash of balsamic vinegar, season to taste.
To assemble the pizza:
Spoon the napoli sauce onto pizza base.
Lay some of the onions over the base, add red pepper and the cajun seasoned duck.
Cook in a hot oven at 200C for 10-12 minutes
To make the dressing:
In a bowl mix the yoghurt, mint, lemon juice, salt and pepper.
Once the pizza has cooked remove it from the oven and drizzle some yoghurt dressing over the top just before serving
