Who can resit a mini pizza. The best thing about pizza is all the different toppings you can have, from duck and Indian spices, smoked salmon and caper, to fresh basil and sun dried tomato, the possibilities are endless.
1 pkt Luv-a-Duck Roast Duck Breast
24 mini pizza bases or 1 large base
2 tbsp tandoori paste
1/2 cup cup shredded tasty cheese
1 lemon - juice
1/2 cup sour cream
1 cup cooked spinach
Mango chutney
Coriander to garnish
Cut 1 duck breast into small cubes and marinate the duck in 2 tablespoons of tandoori paste, lemon juice, sour cream and salt and pepper for 1 hour.
Place the duck onto an oven tray and roast for 15 minutes on 180C, remove from the oven and allow to cool.
To assemble :
Toss the cooked duck in a bowl with the cheese and cooked spinach, pile some of the mix onto the pizza bases and bake in the oven on 170C for 5-7 minutes or until the cheese has melted.
Garnish with coriander and serve with mango chutney.
