4 as a main
A very light and tasty recipe, which uses coconut milk in the egg mix. This type of dish can be found at hawker stands throughout Asia.
1 packet Luv-a-Duck Roast Duck Legs, shredded
2 cups cooked and peeled prawns
1 brown onion finely sliced
2 cups bean shoots
2 spring onions
6 eggs
1/2 cup coconut milk
Dash sesame oil
Pinch turmeric
Salt and pepper to taste
2 tsp of toasted sesame seeds
Vegetable oil for frying
Sweet chilli and paw paw sauce:
4 serrano chillies, minced
4 Thai (birds eye) chillies, finely chopped
1 cup finely sliced paw paw
1 cup sugar
1/2 cup water
1/2 cup rice wine vinegar
2 tbsp garlic, finely minced
1 tsp salt
1 tbsp Thai fish sauce
1 tbsp fresh lime or lemon juice
Mix eggs, coconut milk, turmeric powder and sesame oil and set aside.
In a heavy based saucepan add all the ingredients for the sauce and bring to the boil, once the sauce starts to boil reduce the heat and allow to simmer until its consistency becomes thick. Don't overcook or the sauce will burn.
Heat a heavy based frypan, add enough oil to cover the base and carefully pour in enough egg mixture to cover the base of the pan in a thin layer.
In another frypan heat some oil and add the onions, duck, prawns, bean shoots, spring onion and sesame seeds until well combined and hot.
Remove the omelette from the pan once the base has been cooked, spoon some mixture into the omelette, fold in half and serve with warm sweet chilli and paw paw sauce.
