Very light, fresh and colourful summer salad using Luv-a-Ducks Smoked Duck Breast
1 packet Luv-a-Duck Smoked Duck Breast
1/2 tin butter beans, drained and washed
1/2 tin cannellini beans, drained and washed
250g green beans, ends trimmed and cut in half
250g yellow butter beans, ends trimmed and cut in half
1 cup rocket leaves, washed
1 punnet cherry tomatoes, halved
125g sun-dried tomatoes
4 tbsp mayonnaise
Salt and pepper
Slive the duck breast.
Blanch the fresh beans in boiling water for 2-3 minutes, drain and chill under ice water to retain the colour.
In a large mixing bowl combine all ingredients, mix thoroughly to combine, season to taste and serve on your favourite platter.
