Duck Breast and Goats Curd Tartlets Drizzled with Truffle Oil

INGREDIENTS

280g tortillas
25g melted butter
2 Luv-a-Duck Roasted Duck Breasts
150g of Meredith Goats cheese or other soft fresh goat's cheese
1 small jar truffle oil

METHOD

1. Preheat oven to 180C.

2. Lay out the tortillas flat on a workbench, and using a 5cm cookie cutter, cut out about 48 rounds.

3. Brush both sides with melted butter and press down into small muffin or tartlet tins.

4. Bake for about 6 minutes or until golden.

5. Place a spoonful of the goats cheese in each shell, top with a small slice of the duck, season with salt and pepper and return to the oven for about 5 mins.

6. While still warm, drizzle each one with a couple of drops of the truffle oil.

7. Transfer to a serving platter and serve immediately.
