Peking Duck Pancakes

This recipe allows you to make the pancakes ahead of time and reheat when ready to serve

INGREDIENTS

Luv-a-Duck Peking Breast or Legs (1 piece for 10 pancakes)
Pancakes
Cucumber (de-seeded and into matchsticks the length of the duck slices)
Spring Onion (lengths to match cucumber)
Hoi Sin Sauce

METHOD

Place unopened pancakes (in plastic) into microwave for approx 35 seconds on high.
Meanwhile, take duck out of pack (don't heat first) and slice evenly (aim to get 10 slices out of one breast).
Lay out warm pancakes on bench.
Smear a teaspoon of sauce onto each pancake.
Place a slice of duck, cucumber and spring onion on each pancake (like a clock showing 12 o'clock).
Fold pancake up and across.
To reheat, put completed pancake into microwave allowing 10 seconds for each piece eg. 4 pancakes in for 40 seconds.
