Smoked Duck, Falafel & Hummus Pita

This modern take on the falafel lunch is delicious! Our smoked duck goes perfectly with Mt Zero's Falafel Mix and Raw Material's Chickpea Hummus and so healthy!

INGREDIENTS

1 packet of Luv-a-Duck Smoked Duck Breast
Falafel
Make 8 x Mount Zero falafels (instructions on the pack)
- include in the falafel mix the following:
1/2 cup fresh chopped coriander
1/2 cup fresh chopped mint
1/2 an onion finely chopped
Hummus
100g dried Raw Material's chickpeas (soaked in cold water overnight then boiled for 20 mins until tender)
1 large clove garlic crushed
1/4 cup tahini
1 tbsp Mt Zero extra-virgin olive oil
10 chopped Mt Zero olives (take stones out first!)
1 tsp ground cumin
Citrus Yoghurt Dressing
1/4 cup natural yoghurt
1/2 lemon

2 large pita bread
rocket leaves

METHOD

Make and cook falafels according to instructions on pack (including the extra ingredients we noted above).

Put all ingredients for hummus into a food processor and mix/combine until smooth, check seasoning.

Warm smoked duck in oven at 180C for 10 minutes, then slice.

Squeeze the lemon into the yoghurt and add a pinch of salt. Stir to comine thoroughly.

Arrange the hummus, duck, falafel and yoghurt on the warmed pita bread, add sprinkle of rocket leaves, roll and serve.
