The fruitiness and tartness of rhubarb go extremely well with duck.
2 Luv-a-Duck Roast Duck Breasts
500g rhubarb
1 tsp fresh ginger, grated
100ml port
50ml red wine vinegar
100g raw sugar
Slice the duck breast, keeping the slices together put it in to a dish ready to heat under a hot grill or in a hot oven.
Wash and cut the rhubarb into 3-4 cm lengths place into an ovenproof dish mix in the ginger, port, vinegar and the sugar.
Place into a hot oven for about 20 - 30 mins.
When ready to serve place the duck under the grill or in the oven to heat.
Remove the rhubarb from the oven and gently stir and serve alongside the duck.
