This is a great dish that can be eaten hot, warm or cold and is a good all seasons favourite.
2 Luv-a-Duck Roast Duck Breasts
1 large carrot
1 large parsnip
1 celery stick
1 large onion
1 small pumpkin wedge
2 sprigs oregano
2 tsp olive oil
2 cups rocket or baby spinach
Dressing
3 tbsp olive oil
1 tbsp red wine vinegar
1 tsp grain mustard
1 tbsp parsley, chopped
Salt & freshly ground pepper
Slice the duck breast and heat as per instructions on the packet.
Peel and cut the vegetables into sticks, toss them in olive oil add the thyme place into an oven dish and roast in a hot oven for about 40 mins until golden and cooked.
Toss the vegetables in the dressing while still hot.
Arrange the rocket or spinach on the plate spoon on the vegetables and top with a few slices of duck, drizzle a little more of the dressing over and serve.
