Roast Duck Breast & Caramelised Pear Salad

The slight sweetness of the pear and freshness of the salad make this a perfect dish. It is easy to prepare and ready in minutes

INGREDIENTS

1 packet Luv-a-Duck Roast Duck Breast
2 pears, sliced
2 tbsp butter
2 tbsp brown sugar
1 tbsp red wine vinegar
3 tbsp olive oil
1 tsp seeded mustard
Rocket leaves
Salt and freshly ground pepper
Candied walnuts to scatter
100g soft blue cheese

METHOD

Heat a suitable pan, and add the butter allow to melt, add the sugar and pears and toss until lightly golden.

Make a salad dressing with the oil and vinegar mustard, and season with salt & pepper.

To assemble:
Toss the rocket leaves with the dressing and place onto a serving platter.
Add the pear slices and scatter the walnuts and blue cheese.
Add the sliced duck breast, drizzle with dressing and serve.
