Roast Duck Breast & Glazed Apple Salad

The natural sweetness of the apple and freshness of the salad make this a perfect any time dish.

INGREDIENTS

1 Luv-a-Duck Roast Duck Breast
2 apples
1 tbsp butter
1 tbsp raw sugar
1 tbsp white wine vinegar
3 tbsp olive oil
1 tsp grain mustard
1 tsp parsley, chopped
3 cups mixed salad leaves
1 tbsp flaked almonds, toasted
Salt and freshly ground pepper

METHOD

Slice the duck breast, heat as per instructions on packet.

Cut the apples into wedges and remove the core.

Heat a suitable pan, add the butter and melt. Add the sugar and apple wedges and toss until lightly golden.

Make a salad dressing with the oil, vinegar, mustard and parsley and season with salt & pepper.

Toss the salad leaves with the dressing and place onto a serving plate. Add wedges of apple and the slices of the Roast Duck Breast.

Drizzle any syrup left from the apples over the salad.

Sprinkle with roasted almonds and serve.
