Serve on a platter or individual plates.
When serving this dish, lay the hot asparagus on to a plate, top it with slices of cold duck breast and by the time it reaches the table the duck will be just warm and it will really bring out all the flavours.
1 Luv-a-Duck Smoked Duck Breast or Leg sliced
20 asparagus spears
1 tsp light olive oil (for cooking)
1 tbsp virgin olive oil
1 tsp balsamic vinegar
1/2 cup shaved parmesan cheese
Freshly ground black pepper
Warm a grill plate or a fry pan, brush the asparagus in a little oil and cook for about 4-5 mins turning occasionally.
Serve the smoked duck on top of the grilled asparagus sprinkle with a little virgin olive oil and balsamic vinegar a couple of saved slices of parmesan and sprinkle with a twist of pepper.
