Cherry Sauce

This is an exceptional sauce if you use the Griottines brand of cherries. They are a small cherry marinated in Kirsch and are great! It is also very easy to make.



INGREDIENTS

3 tbls of juice from the cherries
250ml Luv-a-Duck duck stock
1 tbsp cherries
1 tsp butter

METHOD

Into a suitable pan add the cherry juice and bring to the boil and allow to reduce by half.
Add the stock, return to the boil and again reduce by half.
Add the cherries warm them through remove from the heat and whisk in the hard butter, this will give extra richness and shine.

Serve on a plate with the duck on top.
